Christmas is just around the corner and that is why I will teach you how to prepare a pork tenderloin wrapped in bacon stuffed with spinach and mushrooms to serve on the New Year's table and share it with your family. The sirloin may be dry at times, but the bacon keeps the moisture and stays juicy. Join the recipe of this exquisite dish!
Ingredients
- Pork tenderloin (about 1 kilo)
- 3 packages of spinach
- 2 onions
- 1 red pepper
- Ground black pepper
- Olive oil
- 500g of slices of bacon
- 250g of seasonal mushrooms
- Salt
- Salsa to the 4 cheeses
Elaboration step by step
- Preheat the oven to 200º C.
- Clean the pork loin so that there is not too much fat.
- Make a few cuts in the middle to open it, cover with plastic wrap and flatten with a mallet .
- Place a large amount of water in a pot and bring it to a boil.
- Wash the spinach and pour in the boiled water . Leave to whiten for 5 minutes and drain. Reservation.
- In a pan put a finger of olive oil and add the peeled and chopped onions and the red pepper cut into small cubes. Salt and fry for a few minutes.
- Wash the mushrooms and cut them into slices or cubes and add them to the pan. Cook until browned and before removing from heat, add spinach, drained and chopped.
- Uncover the pork loin, salt and pepper to taste and place the filling lengthwise near one of the edges but not so much, given that you must leave a gap of 5cm between the filling and the edge of the loin.
- Once the filling is placed, wrap slowly and carefully so that it does not come out .
- Put the spine in the middle of the bacon lattice and close it.
- Take to the oven for 60-70 minutes.
- Remove, cut into slices of the size you want and cover with sauce to the 4 cheeses . Remember that the pork tenderloin should weigh approximately one and a half pounds to be baked for 60-70 minutes, since if its size is larger, you will have to let it cook for more minutes. In case of not wanting to wrap it with bacon, what you can do is tie it with a resistant thread so that it does not lose its shape.
