Chicken flamenquines, recipe step by step

Ingredients

  • 4 sliced ​​chicken supreme
  • 400g of fried tomato sauce
  • 40g of butter
  • 80g of cured ham cut finely
  • 50ml of vinegar
  • 1 tablespoon chopped fresh tarragon
  • 1 egg yolk
  • Flour c / n
  • Olive oil c / n
  • Salt and ground black pepper c / n

Elaboration step by step

1. To make the chicken flamenquins , put a slice of cured ham on each supreme chicken fillet. Roll and hold with a toothpick.
2. Enharina and fry the flamenquines of ham and chicken in plenty of oil.
3. Place the vinegar in a pot and bring to medium heat. Decrease by half, add the fried tomato sauce, tarragon, salt and ground black pepper. Warm up for five minutes.
4. Remove from heat, add egg yolk and butter cut into small pieces. Remove with a wire whisk so that the sauce has a homogeneous consistency.
5. Serve the chicken flamenquins with their sauce.
