For this reason and in a small tribute to my Galician friends, we will see how to prepare this rich recipe.
Ingredients (For 2 people)
- 1 octopus (2 kg approximately)
- 5 medium potatoes
- 1 onion
- A couple of leaves of laurel
- Sweet paprika
- Spicy paprika
- Coarse salt
- Extra virgin olive oil
Elaboration step by step
- First of all we are going to prepare the different ingredients that we are going to cook. To start we will clean the octopus and peel the potatoes that we will reserve to use later.
- In a large saucepan, add salt water, onion and some bay leaves. When the water is boiling, we frighten the octopus , that is, before putting it in the water we introduce it and take it out of the water 3 times. In this way we will make sure that we do not stay hard.
- While the octopus is cooking, cut the potatoes into slices and cook them.
- When we have the potatoes and the cooked octopus we arrange the potatoes in a serving tray, it is advisable to put it on a wooden plate. Cut the octopus into pieces and arrange it on the potatoes.
- Next, salt the plate with a little coarse salt, sprinkle sweet and spicy paprika to taste and add a good splash of extra virgin olive oil.
