Easy recipe for Mexican burritos

Burritos are a typical dish from the north of Mexico, towards the border with the United States.
This should be the most emblematic Mexican dish prepared with wheat tortilla, most popular in the northern zone, unlike the corn tortilla, which is more popular in the central-southern region of the country.
Burritos have become so popular that there are versions adapted to almost any ingredient; Even dessert burritos. But today we are going to prepare the most traditional recipe, and for my taste it is still the best, with a filling of ground beef and beans.

Ingredients

  • Wheat tortillas: 6 pieces is important to be large, unlike those used for tacos.
  • Onion: a piece.
  • Minced beef: half a kilo
  • Refried beans: 100 grams
  • Red pepper: one piece.
  • Green pepper: one piece.
  • Optional jalapeño peppers , if you like spicy: 2 pieces.
  • Red tomato or tomato: a large piece.
  • Cheese to taste to melt.
  • Garlic: a tooth.
  • Ground black pepper.
  • Neutral flavor oil , such as canola or sunflower.

Preparation

  1. Peel the onion and garlic. Cut the first into small cubes and crush the second.
  2. Wash the peppers, tomatoes and chilies. Remove the white vein and the seeds of chilies and peppers. Cut everything into small cubes.
  3. Heat a pan with a couple of tablespoons of oil, and cook the onion and garlic over medium heat, until the onion begins to turn transparent.
  4. Add the tomatoes, peppers and cut chiles to the mixture and let them cook for a few minutes, so that the tomato evaporates its liquid.
  5. Remove the ingredients in the pan and add the meat. Mix, and lower the intensity of the fire a little.
  6. Let cook the meat in the pan. It is usually ready before 15 minutes.
  7. You can take advantage of the cooking time of the meat to grate or cut the cheese into pieces.
  8. Once the meat is cooked, add salt and pepper to taste. Mix all the stew and test. Correct the seasoning, if necessary.
  9. Heat each tortilla lightly on a low intensity plate (it is recommended to lightly oil the iron so that it does not stick or blacken). You have to do it quickly so that the tortillas do not harden.
  10. Stretch each tortilla on a plate and distribute refried beans over its center. Then cover with a handful of meat, and sprinkle plenty of cheese on top.
  11. Fold the ends of the tortilla inwards, and roll up to form a tube.
