Tartar steak recipe step by step


The tartare, steak tartar or simply tartar steak, is a recipe for minced meat or cut with a raw and macerated knifeIn this dish you can appreciate the taste and texture of the meat at its best. There are several theories about the origin of this recipe, although the most widespread attributes its creation to the Tartar horsemen, natives of a tribe of Mongolia, who used to deposit meat under the saddle and his horse so that it is soft and can be consumed. It is even believed that this method would help heal the sores of horses that originate from saddles.

Ingredients

  • 200g of beef sirloin
  • 1 egg yolk
  • ½ pocada onion
  • 1 chopped shallot
  • ½ cup of chopped capers
  • ½ chopped pickle
  • Dijon mustard
  • Tabasco sauce c / n
  • Worcestershire sauce c / n
  • A stream of extra virgin olive oil
  • A jet of cognac
  • Salt and ground black pepper c / n

Elaboration step by step

1. For the recipe of the Tartare or Steak tartar , the first thing you have to do is chop the meat with a knife to break the membranes that you have and thus achieve greater juiciness. To do so, you simply have to cut slices and then thin strips. Take the strips and cut into small squares. Reservation.
2. Place mustard, egg yolk and olive oil in a large bowl. Remove with the help of a fork or wire whisk to emulsify.
3. Now add the shallot, the capers, the white onion and the pickles, all very well chopped.
4. Add ½ teaspoon of Worcestershire sauce and tabasco sauce so it has a spicy touch.
5. Add the meat and salt to taste. Mix all the ingredients very well to create a homogeneous preparation.
6. Add the cognac and let stand for 10 minutes and place the tartare steak .
