INGREDIENTS TO MAKE A BAKED RABBIT WITH POTATOES


  • A rabbit of 1.5kg approximately
  • 4 medium potatoes
  • thyme and rosemary in spice
  • salt and black pepper
  • olive oil
  • A dribble of white wine

RECIPE OF THE RABBIT TO THE OVEN WITH POTATOES


1.- We cut the rabbit, if we have not done it already. We cut each hind leg individually. Then, the trunk (as it is already from the supermarket, clean) in pieces about three fingers thick. Finally, the front legs, which are smaller than the hind legs, you can leave them next to the trunk or cut them also individually. The head, we discard it.
2.- Peel the potatoes and cut into slices about half a centimeter thick or so. These types of potatoes are called bakers potatoes
3.- Salpimentamos both the potatoes and the rabbit. Then we put the potatoes as a base in a baking dish
4.- Above we place the rabbit. We bathe everything generously with a stream of white wine, which you can substitute for water, sprinkle everything with abundant thyme and rosemary in spice and wet each piece of rabbit with olive oil
5.- We put in the oven, which must previously be heated to about 220ºC.
6.- After about 20-25 minutes, when it is golden, turn over each piece of rabbit. If at any time you see that the bottom of the fountain remains dry, water with a little water to make it juicy. May it never stay dry. Let cook 25 more minutes.
 We already have our rabbit baked ready. The good thing about these roasts is that they hardly take effort. It's just about putting the pieces on a tray and letting the oven work for us
