RABBIT WITH VEGETABLES
Today we are going to prepare a rabbit stewed with vegetables . After preparing the versions of baked rabbit and garlic , I only had to go up, of the most popular, this version of rabbit stew. Like any stew, you can add almost the vegetables that you like the most, but the ones I'm going to suggest next, are pretty good. And the suggested ingredients to prepare this rabbit stewed with vegetables, are the following
INGREDIENTS OF THE RABBIT STEWED WITH VEGETABLES
- 1 whole rabbit
- 1 red pepper
- 2 cloves of garlic
- 1 onion
- 2 carrots
- 200g of crushed tomato
- 1 teaspoon sweet paprika
- 1 tablespoon flour
- Water
- 1 stream of white wine
- Salt and pepper
- Olive oil
RECIPE OF THE RABBIT WITH VEGETABLES
1.- We prepare and cut the rabbit. We removed the head and legs of the trunk. Then, cut the trunk into slices about 3 fingers thick. If you have any viscera, we also remove it from the trunk and reserve it for later. We pepper all the pieces
2.- In a tall pot, add a little olive oil and heat over a high heat. We put all the pieces of the rabbit, except the head that we can discard, and seal them in the oil for about two minutes. That are somewhat golden on the outside but raw inside
3.- Lower the fire and remove all the rabbit from the casserole. In the same casserole, add the pepper, onion and garlic well chopped. We add the carrot cut into thin slices. We pepper and cook everything, while stirring frequently, for about 5 minutes.
4.- After the time we add the crushed tomato and sweet paprika. Mix well and cook another 10 minutes more, always at medium heat pulling low
5.- Cook all this, we add the white wine, which will give a very interesting flavor to all the preparation and we wait for it to reduce almost everything. Then add the tablespoon of flour and mix well, over low heat. That does not burn. This flour will make the sauce a little thicker. We cook 3 more minutes
6.- We add the rabbit and cover it with water. Mix well all the ingredients and let cook about 45 minutes. Until the rabbit and the vegetables are soft. Do not forget to rectify salt before serving
The stews, in general, are not too complicated to make. And in addition, they are usually quite cheap. And this rabbit stewed with vegetables , was not going to be less.
