Carrots and orange muffins recipe step by step


If you want to prepare something delicious and healthy to eat in the afternoon and share with your friends or family, then I will leave you the recipe for delicious carrot and orange muffins . The dough will be really fluffy, moist and tasty. If you wish, you can even incorporate some raisins without bone, pieces of apple or walnuts peeled and chopped. Let's go for the recipe! I'm sure everyone in your house will love it.

Ingredients

  • 125 g of butter at room temperature
  • 115 g of brown sugar or mascabado
  • Juice of an orange
  • Orange zest
  • 175 g of grated carrots
  • 125 g of flour
  • 2 eggs
  • 25 g of crushed hazelnuts
  • 1 ½ teaspoon baking powder
  • Ginger powder
  • Cinnamon powder
  • Nutmeg

Elaboration step by step

  1. Preheat the oven to 180 ° C.
  2. Place the butter at room temperature in a bowl with brown sugar or mash. Stir very well with the wire whisk or the electric mixer until a homogeneous mixture is obtained.
  3. Add the orange zest and mix again.
  4. Add the crushed hazelnuts, the beaten eggs and the juice of an orange.
  5. Beat to mix everything very well and add the grated carrots .
  6. Add the sifted flour together with the baking powder and mix.
  7. Add a teaspoon of the spice mix(nutmeg, powdered ginger, and cinnamon powder).
  8. Place the muffin or cupcake paper molds in the corresponding holes in the muffin pan and fill them with the preparation of the carrots and orange until they are ¾ of their capacity.
  9. Take the carrot and orange muffins in the oven for 20-25 minutes and when the cooking period has passed, remove and let cool on a rack.
If you want to prepare only muffins, you can decorate them with small carrots made with orange fondant ; and if you want to make some cupcakes you can decorate them with a cheese cover for cupcakes made with 280g of mascarpone cheese, 60g of icing sugar, flower or impalpable and grated orange. Mix everything well, place in a pastry bag and cover the top of the muffins.
