Glazed pumpkin muffins recipe step by step

  • 150ml of fresh cream

  • Vanilla extract

Elaboration step by step

1. Preheat the oven to 180 ° C.
2. Place the papers of the muffin molds in the tray and reserve.
3. Peel the pumpkin and finely chop it. Boil and when soft, remove with a slotted spoon and prepare a pumpkin puree .
4. Next, incorporate the sugar and eggs and mix very well.
5. Afterwards, add the salt, the olive oil, the cinnamon powder, the flour, the yeast and the chopped nuts. Mix very well.
4. Put this preparation in the paper capsules and take to the oven for 20 minutes. Remember to insert a toothpick after 20 minutes to know if the muffins are ready; If the toothpick comes out clean, then you must remove the pumpkin muffins from the oven and, if on the contrary, it is stained, you will have to bake for a few more minutes.
5. To make the glaze , place in a bowl the cream, the sugar, the lemon zest, the vanilla extract and the juice. Mix with a wire whisk so that no lumps remain and reserve in the fridge.
