Ingredients
- 600g of pumpkin
- 300g of brown sugar or mascabado
- 2 egg whites
- 2 buds
- Grated lemon
- 125g of ground almonds
- Cinnamon powder c / n
Elaboration step by step
1. Peel the pumpkin and pass it in the oven at medium temperature for 60 minutes.
2. Remove the pips and crush the roasted pumpkin with the brown sugar.
3. Transfer to a saucepan or pot and bring to medium heat until a jam is formed.
4. Once the pumpkin puree has thickened, add the beaten yolks and stir with a wooden spoon so that it does not stick.
5. Add the lemon zest, the ground almonds and a little cinnamon powder.
6. Continue mixing for five minutes and remove from heat. Pour the prepared pumpkin pie into a mold of plum cake (greased with butter and floured) and sprinkle with ordinary sugar. Take the oven to 150°C for 15-20 minutes. Remember to do the stick test: prick the cake in the center and if it comes out clean it is because it is already there, but if it comes out stained it is because you must continue to bake it for a few more minutes.
7. Let the pumpkin pie cool for tea time and unmold.
