RABBIT TO EASY RECIPE

INGREDIENTS FOR A RABBIT WITH GARLIC FOR 4 PEOPLE:
- 1 whole rabbit (without the head)
- 8 cloves of garlic
- 1 glass of white wine
- Salt and pepper

- Thyme (optional)
HOW TO MAKE THE RECIPE OF THE RABBIT TO THE AJILLO:
1.- We started the rabbit. We remove the streaks of fat that we can find and take off his head. Then we separate the legs from the body. Finally, we cut the body into slices of two or three fingers thick
2.- Peel the cloves of garlic and chop them very finely
3.- In a frying pan, put a jet of olive oil and heat it over a very soft fire. Add the chopped garlic and add a pinch of salt. Cook in oil very very soft fire. The objective of this is to flavor the oil with the taste of garlic, not to cook it. So you should not catch color. After 3 or 4 minutes, we remove the garlic and reserve it on a plate
4.- We raise the power of the fire and fry the pieces of the rabbit in it. The oil should be hot but not too much to cook well inside. After about 7 minutes, we turn over each piece and cook it on its other side.
5.- When it is golden brown and cooked, add the garlic and cook it for about 20 seconds. Be careful with it because at high temperatures it burns very fast. Just cook until it browns
6.- Once golden, we toss the white wine to make a delicious sauce with the flavored oil and the garlic. Optionally, you can sprinkle thyme. Let cook a couple of minutes more, evaporate the alcohol and ready!
