Bolognese sauce, recipe step by step

Ingredients

  • 3 tablespoons of olive oil
  • 2 tablespoons of tomato concentrate
  • 1 teaspoon garlic powder
  • 1 onion
  • ½ kilo of minced meat
  • 2 tablespoons chopped garlic
  • ½ cup of chopped carrot
  • ½ cup chopped bacon
  • 2 cups chopped natural tomato
  • 2 teaspoon oregano
  • 1 teaspoon thyme
  • ½ teaspoon of sugar
  • ½ cup of chopped celery
  • ½ cup of white wine
  • ½ cup of brandy
  • 1 cup of beef broth
  • 1 bay leaf
  • Nutmeg, salt and ground black pepper

Elaboration step by step

  1. To make the Bolognese sauce , place the olive oil in a pan and bring to medium heat. When it is hot, add the minced meat and remove it with a spoon. Let cook for 10 minutes.
  2. Pour some salt and garlic powder. Remove with a spoon and remove from heat.
  3. Remove the minced meat from the pan and pour it into a bowl. Reservation.
  4. Place a tablespoon of olive oil in the pan with the chopped garlic and when they are golden brown, add the chopped bacon. When the garlic has taken a little color and the bacon is golden brown, add the chopped onion and let stand for 10 minutes.
  5. Add the half cup of chopped celery and carrot and mix with a spoon so it does not burn. Let sofrito stir for five minutes.
  6. Put the white wine and the brandy over the onion and celery and let reduce over a high heat. Put the meat broth and cook for two minutes.
  7. Add the chopped natural tomato, salt and sugar. Let cook your soft fire for eight minutes.
  8. Now is the time to add the minced meat along with the concentrated tomato, oregano, thyme, bay leaf and nutmeg to taste.
  9. Mix well and cook for 40 minutes over low heat. Remove the bay leaf, salt and pepper to taste and enjoy.
