CHINESE SWEET AND SOUR PORK


Have you ever eaten the sweet and sour pork at a Chinese restaurant It is one of the most popular Chinese recipes we have in the West. I present this recipe for homemade sweet and sour pork. A recipe that has a few ingredients but, they are all very easy to find and cheap. In addition, it is very easy to do. Without further ado, let's see how to prepare our own bittersweet pork .

INGREDIENTS FOR A CHINESE SWEET AND SOUR PORK FOR TWO PEOPLE: 

  • 400g of pork. You can use sirloin if you want more quality or tenderloin if you want it cheaper
  • 150g of wheat flour
  • 200ml of beer
  • 2 carrots
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 4 or 5 slices of preserved pineapple (we reserve their juice for the sweet and sour sauce)
  • Salt
  • Oil

FOR THE SWEET AND SOUR SAUCE


  • 120g of ketchup
  • 60g of sugar
  • 1/2 glass of pineapple juice
  • 2 tablespoons white vinegar
  • 2 tablespoons of soy sauce
  • 1 teaspoon cornstarch

RECIPE OF CHINESE SWEET AND SOUR PORK:


1.- Cut the pork into large cubes and season it with salt.
2.- In a bowl, we put the flour and beer. Add a pinch of salt and mix with a fork. There should be a liquid mixture, but with some body. We put the pieces of pork here and soak them well with this mixture
3.- Fry the pork already soaked in plenty of oil. It is better to do it in small batches, so that the oil does not cool down. We reserve the pork already fried on absorbent paper
4.- In a wok or in a large skillet, we first put the carrot, also cut into large pieces. We cook it over high heat for about three minutes.
5.- Now add the rest of the vegetable. We first put the carrot because it is a vegetable more hard than the others. So we add the peppers and the onion, also cut into large pieces. We do not add the pineapple yet. We continue cooking for about 5 more minutes. Always on high heat and stirring every bit.
6.- While the vegetables are cooking we prepare the sweet and sour sauce. In a small pot we put the ketchup, the sugar, the 1/2 glass of the pineapple juice, the white vinegar, the soy sauce and the cornstarch. We heat the sauce and we integrate all the ingredients, stirring with a spoon. It is not necessary to cook it more.
7.- When we have the vegetable something made (it will still be hard in the center) we add its salt part. We add it now and not before because we do not want the vegetable to sweat and cook in its own juices. We also add the soy sauce, the pieces of pork and the pineapple, also cut into large pieces. Let cook 5 more minutes, stirring constantly, before serving
