Baked stuffed mushrooms with ham and cheese


MUSHROOMS FILLED IN THE OVEN WITH HAM AND CHEESE


How delicious are the mushrooms stuffed in the oven with ham and cheese ! I remember, when I was little, that I went with my parents to a bar in Vitoria called bierhaus. It served them as luxury. That bar no longer exists and those mushrooms did not carry cheese or ham but they did have a little garlic and were served on toast. They were a delight!
Here, I have made an evolved version of said mushrooms, adding ham and cheese. To make them, we will need big mushrooms. That they have space enough to fill them. This is a recipe that is very easy to make and that will result in a spectacular aperitif.

INGREDIENTS TO PREPARE 12 STUFFED MUSHROOMS BAKED WITH HAM AND CHEESE


  • 12 large mushrooms
  • 3 garlic cloves
  • 50g of ham in taquitos
  • 50g grated cheese
  • Chopped parsley
  • Olive oil
  • Salt and pepper

RECIPE TO MAKE MUSHROOMS FILLED IN THE OVEN WITH HAM AND CHEESE


1.- We prepare the mushrooms. If they are not already clean of earth, we clean them with water. Do not soak in excess because the mushroom absorbs a lot of water
2.- With the hands, we remove the stem, trying not to damage the mushroom hat. From the stem, we are going to remove the most blackish part of it. This one does not work. Once this is done, we peel the skin's own hat, which is a bit indigestible. To do this, with the fingers we grab the skin from the base of the mushroom hat and we start it off. It will come out.
3.- In a pan add a small splash of oil and grill the mushrooms. To strong fire, about three minutes per face. Once this is done, remove and salt
4.- Once cooked, in the same pan add the ham taquitos. If necessary, add a little more oil. Cook the ham on a high heat for one or two minutes. Enough time for me to take color. Once done, we reserve them in a bowl, trying to leave as much oil as possible
5.- In the same oil, add the chopped garlic. When you have obtained a little color, add the chopped mushroom stalks. Salt and pepper and cook for about 5 minutes over medium heat
6.- Done this, remove from the pan and put in a bowl where we have the ham. We also add the chopped parsley and with a spoon we mix everything well
7.- Put the mushrooms in a baking dish, fill them well with this mixture that we have prepared, pressing with the spoon if necessary to press and put more. In the end, it has to fit all the filling (to me, I fit). Done all this, we topped with grated cheese, which can be cured, mozzarella or, whichever you like and put in the oven, previously heated to 200ºC, for about 10 minutes

These stuffed mushrooms baked with ham and cheese are very easy and quick to make. You can play with the filling, adding or eliminating ingredients to your liking but I can assure you that these proposed here are very good!
