Tacos al pastor is one of the most popular varieties in Mexican cuisine . The main ingredients are corn tortillas stuffed with pork or beef, marinated with various spices and finally accompanied with tabasco sauce.
Ingredients
For the filling
- 500g of lean beef
- 500g of pork
- 2 onions
- 2 red chilies without seeds
- 1 wide chili without seeds
- 2 cloves of garlic
- 2 cloves
- 1 teaspoon of cumin
- 1 teaspoon oregano
- 200c.c. of alcohol vinegar or apple
- 200g pineapple
For Tabasco sauce
- 2 cups of water
- 1 cup of hot peppers
- 1/3 cup of ground chili or Cayenne chili
- ¾ cup of alcohol vinegar
- 4 teaspoons of salt
- 5 tablespoons of corn starch
- 3 teaspoons ground black pepper
Others
- Cheddar cheese c / n
- Mozzarella cheese c / n
- Corn tortillas c / n
Elaboration step by step
- Cut the peeled pineapple into small pieces. Reservation.
- Boil the chiles for 5 minutes or until they are soft.
- Blend the chiles with the cloves of garlic, onions, cloves, cumin, oregano, vinegar and pineapple until you get a uniform sauce . If you want you can add a little fried tomato .
- Place the meat inside a bowl and top with the tabasco sauce. Cover the bowl with cling film and take it to the fridge to be marine for 4 hours.
- After that period of time, roast the meat on a grill over medium / high heat until golden brown on both sides
- Chop the meat with a sharp knife while you heat the corn tortillas on the griddle or comal.
- To make tabasco sauce you will have to dissolve the corn starch in cold water and place it in a pot to let it boil on a low heat without stopping stirring.
- Cut the hot chili peppers in the middle and remove the seeds. Toss them on an iron and then place them in a blender with the rest of the ingredients, including cornstarch.
- With tabasco sauce ready, you simply have to place some meat in the center of each corn tortilla, grated mozzarella cheese and cheddar cheese to taste. Finally, add a little tabasco sauce and serve warm.
