  • 1 leek
  • 1 onion
  • 2 potatoes
  • 1 glass of vegetable broth or chicken
  • Milk c / n

Elaboration step by step

1. To make the cream of white asparagus, you should peel the fresh asparagus from the yolk to the stem with a pelapatatas, removing the most fibrous part of them and cutting one centimeter from the base. Reserve a couple of buds for decoration and cut the rest.
2. Peel the onion and rub it. Cut the white part of the leek and also chop it finely. Put to poach in a pan with a splash of oil over a low heat.
3. Peel the potatoes and cut them into medium dice. Add them to the pan.
4. Toss the asparagus, room and kitchen for three minutes.
